I\u2019m here to answer your question of what the difference between a flavor concentrate and a flavor extract.<\/p>\n

I have two flavors here, actually they\u2019re both the same flavor.<\/p>\n

I have a lemon emulsion, or concentrate, and a lemon extract.<\/p>\n

Both taste the same, but the lemon extract, because it\u2019s an extraction; while it\u2019s extracting, we are taking out those terpenes, those bitter notes, the waxes, and so that makes the extract cleaner, fresher, great for a beverage.<\/p>\n

But a flavor concentrate, we don\u2019t do anything to it except to emulsify it.<\/p>\n

So we\u2019re taking the same oils that we use for the lemon extract, and we\u2019re emulsifying them with a gum, usually gum arabic or gum
\nacacia, and we\u2019re shearing those.<\/p>\n

So those molecules or those oil droplets are so small, they\u2019re clinging to that gum, and that makes a flavor concentrate really good
\nfor baking. It\u2019s difficult for you to break the emulsion in baking.<\/p>\n

If you were making a lemon cake for instance, that lemon flavor will cling to that gum for a long period of time.<\/p>\n

You can bake it for an hour at 400 degrees and that lemon\u00a0flavor concentrate<\/a>\u2018s gonna stay intact.<\/p>\n

If you bake the lemon extract for an hour at 400 degrees, there won\u2019t be much flavor left.<\/p>\n

Now, baking with lemon extract or extracts in general, it\u2019s an old-school idea; it\u2019s still done, we don\u2019t recommend it.<\/p>\n

Today, we recommend that you use an emulsion because you\u2019re going to use less flavor, the flavor\u2019s going to hold up a lot longer and it\u2019s gonna maintain the character of the lemon, or strawberry; whatever the flavor is.<\/p>\n

So, a lemon flavor concentrate, or a flavor concentrate is designed primarily for baking, but you can use it for making an ice cream, you can make a beverage with it, and you can do a lot of things with a flavor concentrate, but you can\u2019t make a clear beverage for it.<\/p>\n

That\u2019s where an extract comes in. A lemon extract like this would make a great lemon drink or a lemon-lime drink similar to a 7-up or a Sprite. It\u2019s gonna be clear and it\u2019s gonna be clean. It\u2019s not gonna have those bitter notes that
\nwe talked about.<\/p>\n

It\u2019s just gonna have a nice, clean, fresh taste, and then it\u2019s gonna go away; that\u2019s what you want from an extract.<\/p>\n

Also, you don\u2019t necessarily want to use an extract to make ice cream.<\/p>\n

You can, but you\u2019re messing with those freezing temperatures.<\/p>\n

Alcohol doesn\u2019t like to freeze, and if you use too much extract in your frozen dessert mix, you\u2019re gonna have that freezing problem.<\/p>\n

A flavor concentrate would do a great job, you just can\u2019t use too much of it because you\u2019ll get those bitter notes.<\/p>\n
